WHAT’S INCLUDED

Your lamb is professionally processed at a USDA-inspected facility and comes fully cut, vacuum sealed, and labeled.


A typical half lamb (20–30 lbs of finished cuts) includes a mix of:

  • Chops (loin and rib) 
  • Leg roasts 
  • Shoulder roasts 
  • Ground lamb 
  • Stew meat or trim 


Everything is packaged for easy storage and use.


We also include direct delivery to your door (by appointment) in:

  • Birmingham Metro Area 
  • Huntsville 
  • Decatur 
  • Chattanooga 


Delivery timing will be coordinated once processing is complete.

Pricing

 

$11.25 per lb (hanging weight) 

  • Final cost is based on the actual hanging weight of your lamb 
  • Typical totals: 
    • Whole lamb: $560–$675 
    • Half lamb: $280–$340 

What to expect (important): 

  • Hanging weight is not the same as take-home meat 
  • After processing, you will receive ~65–80% of hanging weight 
  • Bones and trim account for the difference 
  • Typical take-home amounts: 
    • Whole lamb: ~35–50 lbs of packaged meat 
    • Half lamb: ~18–25 lbs of packaged meat 

Processing fees are not included 

  • Paid directly to the processor 
  • Typically ~$100–$150 per whole lamb 
  • ~$50–$75 per half 

Example (half lamb): 

  • 25 lb hanging weight × $11.25 = ~$281 
  • Take-home meat: ~18–20 lbs 
  • Processing = ~$60 
  • Total: ~$340

We raise a limited number of lambs each season

 

Each year, we raise a small flock of pasture-raised lambs here at Stag’s Rest.


They are moved with the land, grown on grass and forage, and finished with care. Nothing is rushed. Nothing is scaled beyond what the land can support well.


Because of that, availability is limited.


For the upcoming season, we expect:

  • 8–10 whole lambs 
  • 16–20 half lamb shares 


All lamb will be processed at a USDA-inspected facility and packaged for your freezer.

Timing

Our breeding season begins in October 2026.


Lambs will arrive in early Spring 2027.


They will then be raised through the growing season, allowed to mature at a natural pace on pasture.


Lamb will be ready for harvest in:

  • Late Fall to Early Winter 2027 Just in time for the Holidays


We will confirm exact timing as the season develops.

Deposits

Deposits are taken each spring once the lambs are on the ground.


We host an Open Farm Day where those on the waitlist are invited to visit Stag’s Rest, walk the pasture, meet the flock, and spend a little time on the land.


There will be:

  • A short farm tour 
  • Lamb dishes prepared and shared 
  • A handful of local vendors 
  • Music, and time enough to enjoy it 


It is a good day. And a simple one.


For those who prefer not to attend, remote reservations are accepted and will be handled in the same order as the waitlist.

Reserving Your Share

To reserve a whole or half lamb, a deposit is required.


  • Deposits are 50% of the estimated total cost 
  • Deposits are non-refundable 
  • The remaining balance is due prior to processing


Once your deposit is placed, your share is secured for the season.


Because we raise a limited number of lambs, we are not able to hold animals without commitment.
